In the past 40 years, as overfishing has caused ocean populations to decline, aquaculture - the rearing of fish, crustaceans and molluscs in coastal cages and tanks - has gone from providing 5 per cent of the world’s fish to nearly 50 per cent. Farming techniques are, however, dated and rearing fish in captivity means producers have to wrestle with sporadic outbreaks of disease.
